71. CABALLITO CERRERO AZUL BLANCO 46

Caballito Cerrero continues five generations of tradition as agave growers and vino de mezcal producers dating back to the 1600s. Because Caballito Cerrero uses both agave tequilana (azul) and agave angustifolia (chato), the Consejo Regulador del Tequila no longer certifies them as a tequila distillery. Caballito Cerrero Azul Blanco 46 is the flagship of the lineup at 46% ABV. The mature blue agaves are slow-cooked in a stone oven, crushed by a roller mill, open air fermented with natural yeast, and double-distilled first in stainless steel and then in copper. On the nose are immediate and intense notes of slow-cooked agave, black pepper, lime

peel, green chili, green melon and green pineapple skin. The palate is vegetal with cooked agave, minerality, mint, earthy, herbaceous and green melon sweetness shining through. 72. BOZAL BORREGO SACRIFICIO MEZCAL The Bozal Borrego Sacrificial is an

artisanal created mezcal with Espadín and Tobala agaves. The production is seasonal and takes place at year-end. First, the agave is crushed by a stone tahona wheel moved by a bull, baked in earthen pit ovens, fermented and then distilled. During the second distillation, a leg of lamb, in addition to seasonal wild fruits and grains harvested from the local market, are suspended inside the bottom of the still in a basket. The mezcal’s dry mineral base is offset nicely with an abundance of fruit, herbaceous notes and nuttiness. A viscous entry coats the mouth leading

to a fruit-forward mid-palate with subtle sweetness that shines with bright citrus and persimmons. The finish is smooth with flavours of smoked lamb. $175.99 | MEXICO | 436270 | 750 ml
