To create Glenmorangie Signet Reserve, parcels of matured Signet are meticulously selected by Dr. Bill and his Whisky Creation Team for an additional 12 months of aging in Pedro Ximénez sherry casks. Inspired by the mosaic of flavours and vibrant colours of spice markets, a Tale of Spices is a unique marriage of four cask finishes (i.e. Moroccan red wine, new charred oak, Pedro Ximénez sherry, and shaved toasted red wine casks). It is spicy, sweet, and wonderfully perfumed, with lovely perfumed notes of rose, carnation, jasmine, and lilac, along with a myriad of spices. The mouthfeel bursts with sizzling spices, lots of ginger, black pepper, and mustard seed, which gives a bold earthiness to the flavour, but this is backed up by a soft sweetness like mint toffee and demerara sugar along with some sugar-coated almonds.
